Oatmeal Coconut Chocolate Chippers

I was given the Food Nanny cookbook a couple of years ago, and tried this cookie recipe soon thereafter.  I'm not sure I've made regular chocolate chip cookies since.  When my kids ask if they can make cookies, this is the recipe they're talking about.

1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1 t. baking soda
1/2 t. salt
3 c. oats
1 t. vanilla
1/2 c. coconut
1 1/2 c. chocolate chips

Preheat oven to 350, lightly grease cookie sheet.  Beat butter, sugars, and eggs for 1 minute.  Add dry ingredients.  Stir in oats and vanilla, then coconut and chocolate chips.  Bake 10 minutes.

Chocolate Chip Banana Nut Cookies

(adapted from Mrs. Fields)

Preheat oven to 350.
Blend:
1 c. brown sugar
1/2 c. sugar
3/4 c. soft butter

Add:
1 egg
2-3 mashed bananas

Stir in:
1 c. whole wheat flour
1 2/3 c. flour
1/2 t. baking soda
1/4 t. salt

Add:
1-2 c. chocolate chips
1 c. chopped nuts

Bake 9-10 minutes.  Makes about 4 dozen.
