Apple Salad

4 apples (2 red, 2 green) julienned to make matchstick-sized pieces- leave the peels on
Craisins
Walnuts
Mix,then squeeze half a lemon over the top and toss. 
Add a drizzle of olive oil, and a pinch of salt.
Mix well and refrigerate.

Peach Crumb Bars

For the Dough:
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
1 cup (2 sticks) unsalted butter, cold
1 egg, lightly beaten
For the Filling:
5 cups diced or sliced peaches (about 7 peaches, peeled)
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup granulated sugar
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1. Preheat the oven to 375 degrees F. Grease a 9×13-inch baking pan.
2. For the Dough: In a medium bowl whisk together the flour, sugar, baking powder and salt. Use a pastry blender to cut in the butter, and then the egg. The dough will be crumbly. Pat half of the dough into the prepared pan. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
3. For the Filling: Place the diced (or sliced) peaches in a large bowl and sprinkle with lemon juice. Mix gently. In a separate bowl whisk together the flour, sugar, salt, cinnamon and nutmeg. Pour over the peaches and mix gently.
4. Spread the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer.
5. Bake in the preheated oven for 45 minutes, or until the top is slightly brown. Cool completely before cutting into squares.

Strawberry (or Blackberry) Ice Cream

  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 cups mashed fresh strawberries
In a large bowl, combine the milk, cream, sugar, salt, vanilla, strawberries, and food coloring. Pour the mixture into the freezer bowl of an ice cream maker, and freeze according to manufacturer's directions.

Peachy Bread Pudding

  • 3 whole Eggs
  • 3 Tablespoons Butter, Melted
  • 2 Tablespoons Vanilla
  • 2-½ cups Half-and-Half, Or Milk
  • 2 cups Sugar
  • 2 cups Fresh Peaches, Pitted And Diced
  • 1 pound Sourdough Bread, 1" Cubed
  • ½ cup Pecans, Chopped

Preheat oven to 325 degrees F.
In a large bowl beat 3 eggs, add 3 tablespoons melted butter, 2 tablespoons vanilla, and 2 1/2 cups half and half. Add 2 cups sugar slowly, stirring until it is dissolved. Add peaches and bread, mixing well. Allow mixture to soak into bread 30 minutes.
Spread a bit of butter in a 9 X 13 X 2-inch pan.. Pour in the bread mixture, and sprinkle on pecans. Bake uncovered 50 to 60 minutes, or until knife inserted in center comes out clean.
